π This Weekend’s Recipe: One-Pan Garlic Butter Shrimp & Rice
Ingredients:

1 lb (450g) shrimp, peeled and deveined

1 cup long-grain rice

2 ½ cups chicken broth

4 tbsp unsalted butter

4 garlic cloves, minced

1 tsp paprika

Salt & pepper to taste

Chopped parsley & lemon wedges (optional, for garnish)
Instructions:

Sauté the garlic: In a large skillet over medium heat, melt 2 tbsp butter. Add the garlic and sauté until fragrant (about 1 min).

Cook the rice: Stir in the rice, coating it with the butter and garlic. Add the chicken broth and a pinch of salt. Bring to a boil, then cover and reduce heat. Simmer for 15 minutes.

Cook the shrimp: While rice is cooking, season the shrimp with paprika, salt, and pepper. Once the rice is almost done, nestle the shrimp into the pan, cover, and cook for 5 more minutes until pink and cooked through.

Finish: Add remaining butter and sprinkle with parsley. Serve with lemon wedges if desired.
