🌟 This Weekend’s Recipe: One-Pan Garlic Butter Shrimp & Rice

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined

  • 1 cup long-grain rice

  • 2 ½ cups chicken broth

  • 4 tbsp unsalted butter

  • 4 garlic cloves, minced

  • 1 tsp paprika

  • Salt & pepper to taste

  • Chopped parsley & lemon wedges (optional, for garnish)

Instructions:

  1. Sauté the garlic: In a large skillet over medium heat, melt 2 tbsp butter. Add the garlic and sauté until fragrant (about 1 min).

  2. Cook the rice: Stir in the rice, coating it with the butter and garlic. Add the chicken broth and a pinch of salt. Bring to a boil, then cover and reduce heat. Simmer for 15 minutes.

  3. Cook the shrimp: While rice is cooking, season the shrimp with paprika, salt, and pepper. Once the rice is almost done, nestle the shrimp into the pan, cover, and cook for 5 more minutes until pink and cooked through.

  4. Finish: Add remaining butter and sprinkle with parsley. Serve with lemon wedges if desired.
